Ingredient Squad
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for frying or baking
Instructions
- Mix and Match: Combine all the ingredients in a bowl and mix well.
- Shape Shift: Roll the mixture into little balls..
- Cook the meatballs:
- Fry: Heat olive oil in a large skillet over medium heat. Fry the meatballs until golden brown on all sides.
- Bake: Place the meatballs on a baking sheet and bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until cooked through.
